• 1 package of 250 gr (3 cups) of sliced leeks
  • 30 ml (2 tablespoons) of butter
  • 6 cooked and chopped crispy bacon slices
  • 4 large eggs
  • 250 ml (1 cup) of cooking cream
  • 250 ml (1 cup) of grated Emmenthal cheese
  • 1 pinch of nutmeg
  • Pre-cooked quiche pastry
  • Freshly ground salt and pepper

  • Preheat oven at 375°F (190 °C).
  • Heat butter in a pan, at medium heat. Add leeks, season and cook 12 minutes or until it tenders. Remove leeks from pan, drain well and cool down a bit.
  • Spread leeks into pastry. Spread with bacon and season well.
  • Mix eggs with cream. Season. Pour over leeks and cover with cheese. Spread with nutmeg and oven bake for 25 to 30 minutes.
  • Garnish with crumbled bacon before serving, if desired.
