Ingredients

  • 3 mature bananas
  • 30 ml (2 tablespoons) of melted margarine
  • 30 ml (2 tablespoons) of low fat yogurt
  • 30 ml (2 tablespoons) of unsweetened apples compote
  • 125 ml (1/2 cup) of biological sugar
  • 500 ml (2 cups) of biological flour
  • 2 ml (1/2 teaspoon) of cinnamon or nutmeg
  • 4 ml (3/4 teaspoon) of baking powder
  • 4 ml (3/4 teaspoon) of baking soda
  • 2 ml (1/2 teaspoon) of salt
  • 2 eggs
  • 250 ml (1 cup) of frozen blueberries

Preparation

  • Preheat oven at 350 ºF (180 °C).
  • Crush bananas in a large bowl. Add melted margarine, yogurt, compote, sugar and eggs. Mix well. Set aside.
  • Mix dry ingredients then add slowly bananas mixture. Cover carefully the blueberries without shaking too much.
  • Pour in a non-stick bread mold and bake until a toothpick gets out clean ( for about 75 minutes).
