• 45 ml (3 tablespoons) of vegetable oil
  • 1/3 bag of 250 gr (1 cup) of Les Cultures de Chez Nous sliced leeks
  • 1 sliced onion
  • 2 peeled and diced potato
  • 500 ml (2 cups) of diced broccoli
  • 500 ml (2 cups) of diced cauliflower
  • 2 liter (8 cups) of vegetables broth
  • 250 ml (1 cup) of cooking cream
  • Salt and pepper up to taste
  • 2 ml (½ teaspoon) of ground nutmeg
  • Crouton up to taste
  • Up to your choice grated cheese, up to taste

  • In a big casserole, heat the oil and brown the Les Cultures de Chez Nous sliced leeks and the onion for 3 minutes. Add potato, broccoli, cauliflower, and vegetable broth. bring to a boil. At medium heat, cook uncovered for 25 minutes.
  • Homogenize the soup in an electric mixer and put back in the casserole.
  • Add cream and seasoning. Continue to cook for some minutes to heat it all.
  • When it comes to serving, garnish with crouton and cheese.
