Ingredients

  • 1 minced carrot
  • ¼ package of 250 g of Les Cultures de chez nous sliced leeks
  • 1 liter (4 cups) of beef consommé
  • 125 ml (½ cup) of orzo
  • 45 ml (3 tablespoons) of red porto
  • 15 ml (1 tablespoon) of butter
  • 1 minced onion
  • 1 branch of minced celery
  • 1 stem of thyme (optional)
  • 1 stem of rosemary (optional)
  • 1 Bay leaf (optional)

Preparation

  • In a casserole, melt butter at medium heat. Roast carrot and onion. Add celery, leeks, and, if desired, thyme, rosemary and Bay leaf. Salt and pepper.
  • Pour beef consommé. Bring to a boil. Simmer 20 minutes at medium heat while skimming from time to time.
  • Filter the preparation above a casserole. Add orzo. Bring to a boil and cook 7 minutes.
  • Add porto.
