• 454 gr (1 pound) of fresh slamon, whitout it's skin
  • 1/2 package of 250 gr (1 1/2 cup) of Les Cultures de chez nous sliced leeks
  • 1 whisk egg yolk
  • Salt and pepper, up to taste
  • Some drops of green tabasco
  • 45 ml (3 tablespoon) of oil
  • 4 little breads of whole grain with sesame seeds

  • Preheat oven at 160°C (325°F).
  • Chop salmon with a knife to make it tartare like. In a bowl, mix slamon flesh with the leek, the egg yolk, salt, pepper, and tabasco. make 4 round patties.
  • In a pan, heat oil at medium heat and brown patties on each sides for 5 to 6 minutes. Set aside in the oven to keep it warm.
  • Broil breads, then garnish with 1 salmon patty.

Chef's notes


Have fun to variate garnishings! Caper, roasted onions, wasabi mayonnaise, minced with cream iceberg lettuce, cucumber, sour ream, tomatoes and olives salsa, etc. If you want to obtain more crispy patties, set in flour or with breadcrumbs before baking.
