Apple pie with leeks and Gruyere, gluten free

  • 4 slices of gluten free multigrain bread, 28 g each
  • 30 ml (2 tbsp) melted butter
  • 3 apples, peeled and cubed
  • 30 ml (2 tbsp) lemon juice
  • 15 ml (1 tbsp) brown rice flour
  • 4 eggs
  • 375 ml (1 ½ cups) milk
  • 250 ml (1cup) grated Gruyere cheese
  • 1 package of Les Cultures de Chez Nous sliced leeks

  • Preheat oven to 350ºF (180ºC).
  • Toast the bread slices until they are nicely browned then reduce to bread crumbs in a food processor. Melt 30 ml of butter in a microwave oven then mix the melted butter and bread crumbs in a bowl. Put the mixture in a large pie plate and form into a crust using a fork.Peel the apples and cut into small cubes. Sprinkle with lemon juice.
  • Over medium heat, brown the Les Cultures de Chez Nous sliced leeks in 15 ml of butter. Salt and pepper to taste. Cook over low heat for 10 minutes, stirring occasionally. Add the flour, stir well then spread over the pie crust.
  • Caramelize the apple cubes in 5 ml of butter then spread over the leeks. Season to taste. Beat the eggs with the milk and half of the cheese
  • Pour over mixture of apples and leeks. Sprinkle with the rest of the cheese.
  • Cook for 30 minutes or until the pie is golden brown.
