Ingredients

  • 225 g (1/2 pound) of spaghetti
  • 125 ml (1/2 cup) of asparagus stems
  • 85 ml (1/3 cup) of tomatoes soup or vegetables broth
  • 10 ml (2 teaspoons) of olive oil
  • 125 ml (1/2 cup) of asparagus tips
  • 1/2 minced onion
  • 1/2 minced garlic clove
  • 6 gr (2 teaspoons) of chervil

Preparation

  • Cook pastas same way as usual. In a casserole, bring to a boil asparagus stems into soup or broth. Lower heat at minimum and simmer for 5 minutes. Pour in a blender and reduce into a smooth puree. Set aside.
  • In a casserole, heat oil at medium heat. Fry onion and garlic for 2 minutes while stirring from time to time. Add asparagus tips and cooked spaghetti. Continue cooking fro 1 minute while continuously stirring. Add asparagus coulis and chervil. Salt, pepper and continue cooking 2 more minutes while stirring.
