Italian-style chicken soup- meal

  • 1,5 litre (6 cups) no salt added chicken broth
  • 3 chicken breasts, about 150g each, cut into cubes
  • 1/2 of a 250g package (1 1/2 cups) Les Cultures de Chez Nous sliced leeks
  • 2 diced carrots
  • 1 celery stalk, finely chopped
  • 125 ml (1/2 cup) orzo
  • 3 diced Italian tomatoes
  • 15 ml (1tbsp) pesto
  • A few basil leaves

  • Bring the broth to a boil in a large saucepan over medium heat.
  • Add the chicken, leeks, carrots and celery. Bring back to a boil.
  • Cover and let simmer over medium-low for 10 minutes
  • Add the orzo and tomatoes. Continue cooking for 8 to 10 minutes
  • Add in the pesto and basil just before serving

Chef's notes

If you have some left-over chicken, the orzo and pesto will go great with it in this delicious soup.
