• Leek and maple apple sauce :
  • 1/2 bag 250 gr (1 1/2 cups) Les Cultures de Chez Nous sliced leeks
  • 4 Cortland apples
  • 6 strawberries
  • 1 tea bag (white tea or other fruit flavoured tea)
  • 125 ml (1/2 cup) boiling water
  • 110 ml (4 oz) maple syrup
  • 6 chopped bacon slices
  • 30 ml (2 tbsp) grape seed oil
  • Salt and freshly ground pepper
  • Flour mixture for the cutlets:
  • 75 ml (1/3 cup) white flour
  • 75 ml (1/3 cup ) whole wheat or buckwheat flour
  • 75 ml (1/3 cup) bread crumbs
  • 60 ml (1/4 cup) finely grated parmesan cheese
  • Garlic salt and freshly ground pepper

  • Mix the ingredients and place a sufficient amount in a dish to bread the cutlets. (save the remainder for later use)
  • Peel the apples and cut them into chunks with the strawberries. Place in a saucepan with the tea (steeped in 100 ml (1/2 cup) of boiling water). Add the maple syrup and cook gently for 15 minutes. Add salt and freshly ground pepper.
  • Blend to obtain a smooth texture. Brown the sliced leeks in a pan with the chopped bacon and add the apple sauce. Set aside.
  • Turn the cutlets in the flour and bread crumb mixture and cook in a pan with 5 ml (1 tsp) of grape seed oil per cutlet until cooked to your taste. Pour the apple sauce preparation over the cutlets and serve. Enjoy!
