• 4 large tomatoes, quartered
  • 15 ml (1 tbsp.) butter
  • 2 garlic cloves, chopped
  • 2 red peppers, cubed, seeded
  • 1 250 gr package (3 cups) Les Cultures de chez nous sliced leeks
  • 60 ml (1/4 cup) fresh basil or 10 ml (2 tsp.) dried basil
  • Salt and pepper
  • 500 ml (2 cups) milk

  • Sauté garlic, tomatoes, red peppers and leeks in butter. Add basil, salt and pepper. Cook approximately 20 minutes or until vegetables are tender. Add milk and pour into a blender or food processor and purée. Refrigerate.
