Ingredients

  • 500 ml (2 cups) pumpkin cubes
  • One 250 gr package (3 cups) Les Cultures de Chez Nous sliced leeks
  • 45 ml (3 tbsp.) olive oil
  • 2 carrots, sliced crosswise
  • 2 potatoes, peeled and cubed
  • 1 sliced celery stalk
  • 30 ml (2 tbsp.) curry powder
  • 2 l (8 cups) chicken broth
  • Salt and pepper to taste
  • Garlic croutons (optional)

Preparation

  • In a large casserole, brown the pumpkin cubes and leeks in the olive oil for 3 minutes.
  • Add the rest of the ingredients except for the garlic croutons.
  • Bring to a boil then simmer over low heat for 30 minutes.
  • Serve with the garlic croutons.
