Ingredients

  • 2 packages of les cultures de chez nous sliced leeks
  • 30 ml (2 tbsp.) butter
  • 5 medium potatoes, thinly sliced
  • 1,5 liters (6 cups) cold water or light broth
  • 100 ml (3/8 cup) 35 % cream
  • Chervil, thyme to taste
  • Ground salt and pepper as needed

Preparation

  • In a pan, melt butter, cooks leeks without browning. Salt. Bring to the rolling boil 15 minutes. Remove from heat and set aside. Add cream. Season.
  • Serve right away. Add a few croutons and some grated cheese to the soup when serving.

Chef's notes

Quelques croûtons et du Gruyère râpé compléteront cette soupe.

Pour donner de la couleur, vous pouvez utiliser des pommes de terre bleues, rouges ou jaunes.
