• 30 ml (2 tbsp.) olive oil
  • 1 250 gr package (3 cups) Les Cultures de Chez Nous sliced leeks
  • 1 L (4 cups) chicken broth
  • 2 potatoes, peeled and cut into large chunks
  • 5 pears, peeled de-seeded and quartered
  • 250 ml (1 cup) milk
  • Tarragon

  • Heat the oil in a saucepan over medium heat. Brown the leeks gently until they become transparent. Add the broth, potatoes and pears. Salt and pepper to taste. Bring to boil and then simmer for about 15 min. or until the potatoes are tender. Reduce to a puree in a blender or food processor. Pour into the saucepan and add the milk. Heat and serve.
  • Garnish with tarragon.
