  • Preheat the oven to 190°C (375°F). Line one large or two medium cooking platters with parchment paper or aluminium foil. Place all the vegetables on the platter and pour the olive oil lightly over them, season generously with salt and pepper.
  • Using your hands, cover the vegetables with oil and spread them evenly over the platter taking care not to place them one on top of another. Cook in the oven for 45 minutes, turning them about every 15 minutes. - See more at:
