Ingredients

  • 400 gr (14 oz.) skinless de-boned chicken in cubes
  • Flour to coat the chicken
  • 60 ml (1/4 cup) olive oil
  • Salt and pepper to taste
  • 1 package (3 cups) Les Cultures de chez nous sliced leeks
  • 4 chopped garlic cloves
  • 1 red pepper, in cubes
  • 1 green pepper, in cubes
  • 250 ml (1 cup) small cauliflower tips
  • 30 ml (2 Tbsp.) Herbs de Provence
  • Juice and grated peel of one (1) lemon
  • 500 ml (2 cups) Chicken broth
  • 4 potatoes, in cubes

Preparation

  • Roll the chicken cubes in the flour. Preheat a large ovenware casserole to medium high with the olive oil. Season the chicken cubes and brown them on all sides for 1 to 2 minutes.
  • Add the remainder of the ingredients and reduce the heat to low. Allow to simmer for 50 to 60 minutes.
