Ingredients

  • 1 package 250 gr (3 cups) of sliced leeks Les Cultures de chez nous
  • 45 ml (3 tbsp) butter
  • 1 onion, peeled and sliced
  • Potatoes, peeled and diced
  • 2 fresh parsley sticks
  • 1 ml (1/4 tsp) thyme
  • 2,5 ml (1/2 tsp) marjoram
  • 1 bay leaf
  • 2,5 ml (1/2 tsp) chervil
  • 1,5 liter (6 cups) hot chicken stock
  • 250 ml (1 cup) grated Gruyere
  • 1 dash nutmeg
  • Salt and pepper

Preparation

  • In a large saucepan, heat butter over medium heat. Add leeks and onion, cover and cook 12 minutes over low heat. Stir twice during cooking.
  • Add potatoes. In a cloth, put all seasonings, except nutmeg. Tie with a string and put in the saucepan.
  • Pour chicken stock in and add nutmeg. Cook uncovered 30 minutes over low heat. Distribute cheese in each bowl, cover with soup and serve.
