  • 250 ml (1cup) medium couscous
  • 15 ml (1 c. tbsp) butter
  • 250 ml (1cup) hot water
  • 45 ml (3 tbsp) olive oil
  • 1 pkg. (3 cups) Les Cultures de chez nous sliced leeks
  • 2 tomatoes cut into cubes
  • 60 ml (1/4 cup) freshly chopped mint
  • Salt and pepper to taste

  • Place the couscous in a large bowl, add the butter, pour in the hot water and cover with plastic film. Allow to swell 5 minutes.
  • Brown the leeks with the olive oil for 5 minutes over medium heat.
  • Remove the plastic film and break up the couscous with a fork. Add the leeks, tomatoes and mint. Season with salt and pepper and mix well.
  • This recipe can be prepared 24 hours in advance.
  • Serve with grilled meats
