• 12 green tops of leeks
  • 1 head of garlic (cut 1 unpeeled clove of garlic in two)
  • 1 red Spanish onion
  • 3 liters (12 cups) beef stock

  • Put green tops of leek, the head of garlic and red onion in a bail kettle, cover, steam 10 minutes over medium heat. Add 3 liters (12 cups) of beef stock. Simmer for 1 hour over medium heat, and filter. Keep the stock.
