• 12 green tops of leeks
  • 1 garlic's head (cut 1 unpeeled garlic clove in two)
  • 1 red Spanish onion
  • 3 liters (12 cups) of beef broth

  • Set green tops of leeks, garlic's head and red onion in a cauldron.
  • Steam for 10 minutes at medium heat covered.
  • Add 3 liters (12 cups) of beef broth. Let simmer for about 1 hour at medium heat then filter. Keep broth.
