Ingredients

  • 454 gr (1 lb) lean ground beef
  • 60 ml (¼ cup) bread crumbs
  • 1 beaten egg
  • Salt and ground pepper
  • 30 ml (2 tbsp) butter
  • 30 ml (3 tbsp) olive oil
  • 1 package 250 gr (3 cups) Les Cultures de Chez Nous sliced leeks
  • 2 carrots, peeled and cut into rounds
  • 2 garlic cloves, finely chopped
  • 1,5 litre (6 cups) beef broth
  • 2 potatoes, peeled and cubed
  • 1 can 796 ml (28 oz) Italian tomatoes
  • 125 ml (½ cup) chopped parsley

Preparation

  • Mix the ground beef with the bread crumbs, egg, salt and pepper in a bowl and make meatballs using about 15 ml, (1 tbsp) of the meat mixture for each one. Melt the butter with the olive oil in a large saucepan and brown the meatballs completely over medium high heat. Add the leeks, carrots and garlic and continue browning for about 1 minute.
  • Add the beef broth, potatoes and tomatoes and allow to cook for 10 minutes.
  • Garnish with parsley and serve. Accompany with country style bread.
