• 6 chopped slices of bacon
  • 1 package (3 cups) Les Cultures de chez nous sliced leeks
  • Salt and pepper
  • 45 ml (3 tbsp) butter
  • 6 slices of bread
  • 6 eggs

  • Preheat oven to 200ºC (400ºF).
  • In a frying pan, brown the bacon for 2 minutes. Add the leeks and brown for a further 2 minutes. Salt and pepper to taste and set aside.
  • Butter the bread slices on both sides.
  • Using a cookie cutter, cut a large circle from the center of each slice of bread. Save the circle.
  • Place the bread slices and the circles on a large cookie pan covered with parchment paper and break an egg into the hole in each slice. Season with salt and pepper and cook in the oven for 6 to 7 minutes. Divide the leek and bacon mixture between 6 plates and place a bread slice with its egg and circle on each plate.
  • Serve while hot.
