Ingredients

  • 454 gr (1 pound) beef tortellini
  • 15 ml (1 tbsp) vegetable oil
  • 1 cooking onion, chopped
  • 1 package of sliced leeks Les Cultures de chez nous
  • 2 garlic cloves, minced
  • 2 celery sticks, chopped
  • 2 carrots, sliced
  • 500 ml (2 cups) broccoli florets
  • 10 ml (2 tsp) dried thyme
  • 10 ml (2 tsp) dried oregano
  • 10 ml (2 tsp) dried basil
  • 1 can (19 ounces) tomatoes
  • 1 liter (4 cups) vegetable broth
  • Salt and pepper to taste

Preparation

  • In a large saucepan, heat oil and cook onion, leeks, garlic, celery, carrots and broccoli, stirring, for 3-5 min. Add seasonings and continue cooking 1 min. Add tomatoes, vegetable broth and tortellini and bring to a boil.
  • Turn heat down to low, cover partially and simmer 15-20 min or until tortellini are cooked. Add salt and pepper to taste.
