• 24 oysters
  • One 250 gr (3 cups) Les Cultures de chez nous sliced leeks
  • 1 chopped garlic clove
  • 45 ml (3 tbsp.) butter
  • 15 ml (1 tbsp.) white wine
  • 125 ml (1/2 cup) 35% cream
  • 30 ml (2 tbsp.) bread crumbs
  • 60 ml (1/4 cup) grated Gruyere cheese
  • Salt and pepper to taste

  • Open the oysters, remove the flesh. Save the juice and shells. In a casserole, brown the leeks and garlic in butter. Add the white wine, the oyster juice and the cream. Reduce to half the volume.
  • Preheat the oven grill. Add the oysters to the leek sauce cook for 1 minute. Fill each shell with an oyster and sauce. Mix the bread crumbs and Gruyere cheese, salt and pepper and top each oyster with the mixture. Grill in the oven and serve immediately.
