Ingredients

  • 1 1/2 package 250 gr (1 1/2 cup) of sliced leeks Les Cultures de chez nous
  • 30 ml (2 tbsp.) butter
  • 4 egg yolks
  • 2 whole eggs
  • 150 gr (1/4 pound) fresh goat cheese
  • 500 ml (2 cups) 15% country style cream
  • One 23 cm (9 inches) short crust pastry
  • 2 ml (1/2 tsp) thyme flowers
  • Salt and pepper
  • Nutmeg to taste

Preparation

  • Stew leeks in butter, salt, pepper and pour into pie crust. Mix cream with cheese, eggs and thyme. Salt, pepper and nutmeg. Pour this mixture over leeks.
  • Brown in the oven 30 minutes at 350°F (180°C).

Chef's notes

Serve with a mixed salsa seasoned with sunflower oil and cider vinegar.
