Ingredients

  • 30 ml (2 tbsp) canola oil
  • 8 chicken breast tournedos
  • 2 packages 250 gr (6 cups) of sliced leeks Les cultures de chez nous
  • 2 red apple, minced
  • 125 ml (1/2 cup) sweet apple cider
  • 250 ml (1 tasse) Loneys chicken stock
  • 200 gr (1/2 pound) herbs goat cheese

Preparation

  • Preheat oven to 400°F (200°C). In a pan, brown chicken tournedos in hot oil 5 minutes on each side. Finish cooking in the oven 15 minutes until they are well done.
  • In the same pan, drain surplus oil and sauté leeks 2-3 minutes. Add cider, stock and apples. Continue cooking over medium heat 5 minutes. Keep warm.
  • Spread cheese over chicken breast tournedos and roast in the oven. Serve chicken breast tournedos over leek sauce with your favourite starchy food.
