Chicken breasts with leeks-mignon

  • 750 ml (3 cups) chicken broth
  • 250 ml (1 cup) white wine
  • 2 packages of Cultures de Chez Nous leek-mignon
  • 2 thinly sliced shallots
  • Pepper to taste
  • 4 de-boned chicken breasts or legs
  • 185 ml (3/4 cup) mozzarella

  • The chicken broth, white wine, leek-mignon cut in half, sliced shallots, pepper and chicken breasts (or legs) in a large pot. Cover and cook gently for 45 min. Remove the leeks-migon and the chicken and sprinkle the broth with the mozzarella and stir well. In each dish, place one chicken breast and a piece of leek-mignon on each plate and top with the sauce.
