• 1 kg (2 pounds) aproximatively of roast beef pallet
  • Salt and pepper
  • 45 ml (3 tablespoons) of vegetables oil
  • 30 ml (2 tablespoons) of butter
  • 1 bag of 250 gr (3 cups) of Les Cultures de Chez Nous sliced leeks
  • 115 gr (1/4 pound) of minced smoked bacon or bacon
  • 2 chopped clove garlic
  • 1 mushroom tray, cutted in 4
  • 2 bottle of 341 ml of blond beer
  • 2 Bay leef
  • 125 ml (1/2 cup) of Dijon's mustard
  • 125 ml (1/2 cup) of finely chopped fresh parsley,

  • Preheat oven to 180ºC (350ºF).
  • Season the roast and set aside. Pre-heat a casserole, add the oil and butter. Brown the roast on both sides, remove from heat and add the leeks, bacon cubes, mushrooms and garlic. Pour the beer over the roast.
  • Cover and cook in the oven for 2 hours and 20 minutes uncovered.
  • At the end of the two hours, add the mustard and chopped parsley. Return to the oven for another 20 minutes.
  • Serve with buttered tagliatelle

Chef's notes

Can also be prepared in a Crock Pot at medium heat for 8 hours.
