• 8 leeks washed and cut in four pieces
  • 15 ml (1 tbsp) lemon juice
  • 500 ml (2 cups) light white sauce, hot
  • 1,25 ml (1/4 tsp) nutmeg
  • 75 ml (1/3 cup) grated Gruyere cheese
  • Salt and pepper
  • Dash of paprika
  • 500 ml (2 cups) salted boiling water

  • Preheat oven to 350°F (180°C). Put leeks in salted boiling water. Add lemon juice, cook 16 minutes over medium heat. Drain leeks and put in a au-gratin dish, greased.
  • Generously salt and pepper. Add white sauce. Sprinkle with nutmeg and grated cheese. Add a dash of paprika. Cook 20 minutes in the oven.
