  • 8 cups (2 liters) diced pumpkin
  • 2 tablespoons (30 ml) butter or margarine
  • 1 leek, sliced (1.5 cups)
  • 3 diced potatoes
  • 6 cups (1,5 liters) chicken broth
  • Salt and pepper to taste
  • 1 1/2 cups (375 ml) milk or cooking cream
  • Nutmeg to taste

  • In a sauce pan, melt butter or margarine. Brown Les Cultures de chez nous sliced leeks and pumpkin. Add potatoes and broth. Salt and pepper. Cover and simmer for 40 minutes.
  • Blend with a mixer or blender. Return to the saucepan. Bring to the edge of boiling, then add cream or milk and nutmeg. DO NOT BOIL.
  • Serve with browned croutons.
