Melted Brie with Leeks & Dried Fruit

  • 1 leek, sliced (1 1/2 cups)
  • 2 tablespoons (30 ml) butter
  • 1 ripe peeled pear, cubed
  • 1/4 cup (60 ml) chopped pistachios
  • 1/4 cup (60 ml) dried cranberries
  • 1 teaspoon (5 ml) finely chopped fresh rosemary
  • 1 Brie cheese, or other soft cheese

  • Preheat oven to 350 °F (180°C).
  • In a pan, brown the sliced leeks. Cook for 2 minutes. Add cubed pears, pistachios, cranberries and rosemary. Cook 1 minute more, while stirring regularly. Set aside.
  • Lay Brie cheese in an oven-safe dish covered with aluminium paper. Cover with leek garnish. Bake in the oven for 15 to 20 minutes. Let cool 5 minutes before serving.
  • You can prepare leek garnish ahead of time, and it can be kept in the refrigerator until the next day.
