  • 6 leeks, sliced (8 cups)
  • 2 tablespoons (30 ml) butter
  • 2 tablespoons (30 ml) olive oil
  • 1/2 cup (125 ml) white wine
  • Salt & pepper

  • In a saucepan, cook leeks over medium heat in butter and oil until tender. Add salt & pepper. Deglaze with the wine and allow them to reduce until all liquid has evaporated.
  • Leek reduction is delicious when accompanying pork and chicken.
