  • 2 leeks, sliced (3 cups)
  • 4 tablespoons (60 ml) olive oil
  • 3/4 cup (175 ml) tomato sauce
  • 1/2 cup (125 ml) chopped walnuts
  • 1/2 cup (125 ml) chopped fresh herbs (chives, basil and oregano)
  • 1 pizza dough (10 - 12 in.), or a large pita bread
  • 1 package sliced goat cheese (5 oz/150 gr)
  • 12 black or green olives, pitted

Preparation

  • Preheat oven to 400 °F (200 °C).
  • Heat a large pan. Add olive oil and sliced leeks. Brown for 2 minutes over medium heat.
  • Season and set aside. Brush pizza dough with tomato sauce. Add leeks, goat cheese slices, pitted olives and walnuts.
  • Bake in the oven for 10 to 15 minutes, remove, garnish with herbs and serve.
