  • 2 tablespoons (30 ml) butter
  • 2 leeks (3 cups), sliced
  • 1 cup (250 ml) cooking cream
  • 5 ounces (150 gr) Cantonnier or Parmesan cheese
  • Salt and pepper
  • 12 thin slices baguette bread, buttered

  • Brown sliced leeks in butter for about 5 minutes. Add cooking cream and Cantonnier cheese to the sliced leeks.
  • Simmer over low heat for 15 to 20 minutes. Salt and pepper to taste.
  • Meanwhile, broil slices of bread in the oven on a baking sheet. Spread leek preparation over toasted bread slices.
