Ingredients

  • 1 leek, sliced (1 1/2 cup)
  • 3 cups (750 ml) diced tomatoes
  • 2 garlic cloves, chopped
  • 5 tablespoons (75 ml) olive oil
  • 1 tablespoon (15 ml) basil
  • Salt and pepper
  • 1 loaf baguette bread
  • 1/2 cup (125 ml) grated cheese, Parmesan, Mozzarella or Swiss

Preparation

  • Mix the first 5 ingredients in a bowl. Cover and chill in the refrigerator for one hour.
  • Lay slices baguette bread on a baking sheet. Toast on one side. Turn the slices, toast other side.
  • Spread the mixture of tomatoes on the bread and spray with the liquids left.
  • Finally, spread cheese over slices, or make some without cheese. Oven broil at 425°F (220°C) or until all cheese is melted.
