  • 3 tablespoons (45 ml) vegetable oil
  • 1 leek, sliced (1 cup)
  • 1 sliced onion
  • 2 potatoes, peeled and diced
  • 2 cups (500 ml) diced broccoli
  • 2 cups (500 ml) diced cauliflower
  • 8 cups (2 liters) vegetable broth
  • 1 cup (250 ml) cooking cream
  • Salt and pepper to taste
  • ½ teaspoon (2 ml) ground nutmeg
  • Croutons to taste
  • Your choice of grated cheese, to taste

Preparation

  • In a big sauce pan, heat the oil and brown the sliced leeks and the onion for 3 minutes. Add potatoes, broccoli, cauliflower and vegetable broth. Bring to a boil. Over medium heat, cook uncovered for 25 minutes.
  • Homogenize the soup with an electric mixer and return to pot.
  • Add cream and seasoning. Continue to cook for several minutes until everything is heated.
  • When serving, garnish with croutons and cheese.
