• 30 ml (2 tablespoons) of olive oil
  • 1 package of 250 gr (3 cups) of Les Cultures de chez nous sliced leeks
  • 2 garlic cloves, crushed
  • 1 cauliflower sliced roughly
  • 1,5 liter (6 cups) of vegetables or chicken broth

  • In a large casserole, heat at medium heat oil. Add Les Cultures de Chez Nous sliced leeks and garlic, and cook for 5 minutes while stirring regulary. Add cauliflower and seasoning, then continue to cook for 2 more minutes. Add broth, and bring to a boil. Simmer at meadium heat, half covered for 20 minutes or till the vegetables tenders.
  • With an electric mixer, reduce into puree and verify the seasoning. Garnish up to taste. See the different garnishment.

Chef's notes


  • Serves the soup and pour a light thickle of olive oil extra virgin or parsley oil on each portion. Garnish the plate with parsley.
  • Serves the soup and garnish with light wiped cream, and sprinkle with curry.
  • Accompany with roasted Cheddar soufflé.
