• 30 ml (2 tbsp) olive oil
  • 1 250 g package (3 cups) Les Cultures de Chez Nous sliced leeks
  • 2 chopped garlic cloves
  • 1 cauliflower cut into small bouquets
  • 15 ml (1 tbsp) curry
  • 15 ml (1 tbsp) turmeric
  • 1,5 ml (1/8 tsp) Cayenne pepper
  • 1,5 L (6 cups) low salt chicken broth
  • 1 can (541 ml) white beans, rinsed and drained

  • Brown the leeks in olive oil for 5 to 7 minutes until the leeks become soft. Add the spices and continue cooking for 1 minute. Add the cauliflower bouquets and mix well.
  • Add the chicken broth and bring to a boil. Reduce the heat and allow to simmer for 20 minutes or until the vegetables are tender. Add the white beans and reduce to a purée in a blender.
  • Salt and pepper to taste.
