Ingredients

  • 375 ml (1 1/2 cup) of grated Butternut squash
  • 250 ml (1 cup) of Les Cultures de chez nous sliced leeks
  • 125 ml (1/2 cup) of 15% cooking cream
  • 80 ml (1/3 cup) of grated Parmesan
  • 4 cod fillets of 180 gr (about 1/3 pound)
  • 30 ml (2 tablespoons) of olive oil
  • 30 ml (2 tablespoons) of minced fresh basil

Preparation

  • Preheat oven at 205 ºC (400 ºF).
  • In a pan, heat oil at medium heat. Cook squash and leeks for 4 to 5 minutes. Add cream, parmesan and, if desired, basil. Salt and pepper.
  • Set cod fillets over a baking sheet covered with parchment paper. Divide squash and leeks mixture over fish. Oven bake 12 to 15 minutes then serve.
