• 4 10 inch diameter whole wheat tortillas
  • 15 m (1 tbsp) olive oil
  • 1 chopped garlic clove
  • 500 ml (2 cups or le 2/3 of a package) Les Cultures de Chez Nous sliced leeks
  • 45 ml (3 tbsp) tomato paste
  • 250 ml (1 cup) plain 2% Greek yogurt
  • 30 ml (2 tbsp) fresh chopped dill
  • 300 g small frozen scallops size 120/80
  • 250 ml (1 cup) grated parmesan cheese
  • Salt and pepper to taste

  • Preheat oven to 400oF.
  • In a skillet, brown the garlic and 250 ml of leeks in olive oil. Turn off the heat and add the tomato paste, stirring to ensure that the leeks are thoroughly coated with the paste. Add the yogurt and dill. Season to taste.
  • Spread a thin coat of the sauce over each tortilla, leaving a 1.5 cm border around the edge. Garnish with the scallops, parmesan and the remainder of the leeks. Cook in the oven for 7 minutes at 400 oF and then on broil for 2 minutes.

In addition to saving time, using tortillas saves a good amount of carbohydrates, a definite plus for diabetics.
