• 1 540 ml can of black beans, rinsed and drained
  • 180 ml (3/4 cup) nutritional yeast
  • 60 ml (1/4 cup) ketchup
  • 15 ml (1 tbsp) Dijon mustard
  • 1 egg
  • ½ 250 g package (1,5 cups) Les Cultures de Chez Nous sliced leeks
  • 15 ml (1 tbsp) brown sugar

  • Preheat oven to 350 ºF.
  • Place the black beans in the food processor bowl. Pulse the processor to obtain coarsely ground beans.
  • In a large bowl, mix all the ingredients except the brown sugar. Pour the mixture into a bread tin lined with parchment paper. Sprinkle with brown sugar.

Nutritional note 

The beans are an interesting and economical substitute for meat. Rich in fibre and protein, they are also a good source of iron. A serving of this loaf provides 10 grams of protein, 6 grams of fibre and 2 mg of iron.
