Ingredients

  • Asparagus mousse :
  • 10 small asparagus
  • 100 gr (100 ml) of white cheese (a small container)
  • Salt and pepper
  • Avocados cream :
  • 1 mature avocado
  • 15 ml (1 tablespoon) of lemon juice
  • Pepper
  • Celery salt
  • 5 ml (1 teaspoon) of fresh cream (optional)

Preparation

  • Peel asparagus an cook in boiling water, for 15 to 20 minutes, depending on the size. Drain and cool down. Mix asparagus with white cheese. Salt and pepper the mousse then set aside.
  • Prepare avocado cream. Mix avocado with lemon juice. Salt and pepper the cream. You could add 5 ml (1 teaspoon) of fresh cream to make it more creamy.
  • Divide avocado cream at the bottom of the glasses then pour the mousse over it.
  • Ganish with parmesan shavings. Set glasses at cold until serving.
