Leeks guacamole and homemade tortillas chips

  • 6 medium sized tortillas, slice into triangles
  • 30 ml (2 tablespoons) of vegetable oil
  • 2 chopped garlic cloves
  • 1 package of 250 gr (3 cups) of Les Cultures d echez nous sliced leeks
  • 5 mature avocados
  • Lime zest and juice
  • Sambal oelek up to taste or few drops of tabasco
  • Salt and pepper up to taste

  • Preheat oven at 180 °C (350 °F). Set tortillas slices on a cookie sheet. Oven bake 15 minutes.
  • In a casserole, heat oil with garlic and leeks at low heat. Cook and stir for 5 minutes. Remove from heat and cool down for 15 minutes.
  • Slice avocados in two with a knfew and remove core. With a spoon remove flesh off the peel and set into a bowl.
  • With a fork, crush avocados flesh with lime juice and zest. It won't blackens this way. Add ingreients left and mix well. Salt and pepper.
