Leeks with Oka cheese croutons

Ingredients
30 ml (2 tablespoons) of butter
1 package of 250 gr (3 cups) of sliced leeks
160 ml (2/3 cup) of cooking cream
Salt up to taste
12 thin slices of buttered baguette bread
12 thin slices of Oka cheese, slightly thinner than baguette slices

Preparation
Preheat oven at 375°F (190 °C).
Heat butter in a large nonadhesive pan at medium heat. Cook in it the Les Cultures e chez nous sliced leeks for 6 to 7 minutes while stirring.
Reduce heat at medium-low and let cook until leek has returned its water. Stir from time to time. Do not brown. Add cream and reduce until it thickers. Salt.
Meanwhile, broill bread slices in the oven on a baking sheet. Then divide leeks preparation over grilled breads. Add a cheese slice. Spread lightly with crushed pepper.
Oven bake 15 minutes or until cheese lightly gratin.
