Ingredients

  • 12 leek's greens
  • One garlic bulb
  • 1 spanish onion
  • 3 celry branches
  • 45 ml (3 tablespoons) of butter and olive oil
  • Grey sea salt and pepper up to taste
  • 3 liters (12 cups) of water
  • 1 spice garnished bouquet (thyme, Bay leaf and parsley)

Preparation

  • Chop all vegetables in small pieces. Steam leek's green and the rest of vegetables in butter for about 15 minutes at low heat with a lid.
  • Salt, pepper and add water and the garnished bouquet. Let cooks 1 hour (skim if necessary).
  • Set stamen chinese broth (keeps vegetables for ulterior use, like soups or vegetables puree).
  • Clarify consommé with eggs white and raw vegetables, if desired.
