• 45 ml (3 tablespoon) of olive oil
  • 2/3 package of 250 gr (2 cups) of Les Cultures de chez nous sliced leeks
  • 4 Italians sausages,sweet or spicy, it's up to taste
  • 125 ml (1/2 cup) of garted parmesan cheese
  • Salt and pepper up to taste
  • Sauce :
  • 250 ml (1 cup) of homemade or commercial tomato sauce
  • 125 ml (1/2 cup) of red wine or chicken broth
  • 125 ml (1/2 cup) of fresh basil

  • In a large pan, heat olive oil at high-medium heat. Add Les Cultures de chez nous sliced leeks and let brown for 4 to 50 minutes while stirring from time to time. remove from heat and let cool down.
  • Preheat oven at 400 °F (200 °C) or BBQ at high heat.
  • Remove sausage flesh from its membrane. Mix sausages flesh with leek and parmesan. Seasons with salt and pepper.
  • Make small meatballs of the size of 1,25 cm (1/2 inch). Skewer on a bamboo skewer dipped in water. Set on a oiled cookie sheet or a BBQ cooking plate.
  • Oven bake for 20 minutes or till meatballs gets well cooked. For BBQ baking, reduce heat at minimum and cook 15 minutes.
  • Heat tomato sauce with the wine in a casserole at low heat for 5 minutes. Add basil.
  • Set tomato sauce at the bottom of the plate and lay meatballs. Garnish with fresh basil leaves.
